WHAT A CAKE

Stumbling across the blog "honey & jam" run by Hannah Queen (check out her instagram..eyegasm!) and instantly fell in love with this lemon cake with black tea frosting, it usually puts me off when measurements are in cups (us English work in grams) but nothing was holding me back from trying this cake, and oh gosh I'm glad I did. First of all, I'm never going back to plain old buttercream frosting, this egg white frosting is so perfectly delicate and glossy and just looks beautiful. Secondly, the cake. Oh the cake, it's so moist and lemony and just delicious. I followed the recipe except I added vanilla (from the pod not essence) as I can't make a cake without vanilla, just a habit I have. 
I don't feel like adding my photos here as Hannah's photography is just so perfect, but here we go, this was my take on the cake.




Apparently wrapping a wet tea towel around the cake tin when cooking does make it rise perfectly evenly! Chuffed with this, makes it easier to decorate!
